There are some recipes that are summer staples and the watermelon feta salad is one of them. Both at Aux Delices and at home, the salad is a hit. The watermelon feta salad to your summer recipes today.
Lime Vinaigrette Ingredients (Makes about ½ cup)
¼ cup fresh lime juice (from 1 to 2 limes)
½ teaspoon kosher salt
⅓ cup extra-virgin olive oil
Freshly Ground black pepper
Lime Vinaigrette Directions
- Whisk together the lime juice and salt until the salt dissolves
- Still whisking, slowly drizzle in the olive oil until incorporated
- Season to taste with pepper
- Serve
If you’re not using the vinaigrette right away, cover and refrigerate. Shake or whisk well before using.
Watermelon Feta Salad Ingredients
3 cups diced seedless watermelon (1-inch dice) (from a 2-pound watermelon)
1 pint grape tomatoes, halved lengthwise
10 pitted Kalamata olives, halved
½ small red onion, thinly sliced
½ cup basil leaves cut in a chiffonade
1 tablespoon chopped mint
6 ounces feta cheese, crumbled or diced
½ cup Lime Vinaigrette (recipe above), more or less to taste
Kosher salt and freshly ground black pepper
Watermelon Feta Salad Directions
- Mix together the watermelon, tomatoes, olives, onion, basil, and mint and toss gently
- Add the feta and lime vinaigrette and toss gently
- Season to taste with salt and pepper
- Serve
