There are some recipes that are summer staples and the watermelon feta salad is one of them. Both at Aux Delices and at home, the salad is a hit. Adding the salad to the menu of a BBQ or a summer picnic is a good idea. It’s such a good recipe that another cookbook chef, Rozanne Gold, and I found our love for the salad was in common on a radio show I host called Two Hungry Women.

Lime Vinaigrette Ingredients (Makes about ½ cup)

Watermelon Feta Salad Lime

¼ cup fresh lime juice (from 1 to 2 limes)

½ teaspoon kosher salt

⅓ cup extra-virgin olive oil

Freshly Ground black pepper

Lime Vinaigrette Directions

  1. Whisk together the lime juice and salt until the salt dissolves
  2. Still whisking, slowly drizzle in the olive oil until incorporated
  3. Season to taste with pepper
  4. Serve

If you’re not using the vinaigrette right away, cover and refrigerate. Shake or whisk well before using.

Watermelon Feta Salad Ingredients

3 cups diced seedless watermelon (1-inch dice) (from a 2-pound watermelon)

1 pint grape tomatoes, halved lengthwise

10 pitted Kalamata olives, halved

½ small red onion, thinly sliced

½ cup basil leaves cut in a chiffonade

1 tablespoon chopped mint

6 ounces feta cheese, crumbled or diced

½ cup Lime Vinaigrette (recipe above), more or less to taste

Kosher salt and freshly ground black pepper

Watermelon Feta Salad Directions

  1. Mix together the watermelon, tomatoes, olives, onion, basil, and mint and toss gently
  2. Add the feta and lime vinaigrette and toss gently
  3. Season to taste with salt and pepper
  4. Serve
