Things you’ll need:

½ cup canola oil (or half olive, half canola)

1 cup sugar

2 eggs, beaten

3 ripe bananas, mashed (about 2 cups)

2 cups flour

1 teaspoon baking soda

½ teaspoon baking powder

½ teaspoon salt

3 tablespoons milk

1 teaspoon vanilla

½ cup chopped walnuts (optional)

Banana Nut Bread Directions:

  1. Preheat your  oven to 350 degrees.
  2. In a large bowl, beat with a whisk, the oil and sugar until blended.
  3. Add the eggs and mashed bananas and mix well.
  4. Sift together the dry ingredients and slowly add to the sugar mixture.
  5. Add the milk, vanilla, and the nuts and mix well.
  6. Pour batter into a greased 9x5x3 pan and bake for 60-70 minutes or until a toothpick comes out clean.
